Grilled Chicken and Veg with Quinoa

This was requested by Poppy following her first visit to an Alive session, she is very interested in what foods are good for you and why. One of Sue’s recommendations was quinoa, which we had never tried before, and therefore got Poppys interest. I would recommend making the sauce as it is very dry otherwise.

Serves 3
1 pack chicken strips
2 x courgettes
1 x red pepper
1 tbsp tomato ketchup
1 tbsp Worcestershire sauce
quinoa (I portioned off the quinoa as per the pack instructions, I would recommend you do this to your personal preference as it is very filling)

• Cover your quinoa about an inch above with water, bring to the boil and then let it simmer for 20 minutes
• Meanwhile, dry fry the chicken strips, once these are almost cooked you can add your veg cut however you prefer
• Once completely cooked mix the Worcestershire sauce and ketchup in a ramekin and just mix through until warm
• Serve your quinoa with the veg and chicken on top
