Quorn Bolognese Stuffed Peppers

 

This is a really filling recipe, but the Quorn is full of protein and little fat, there is only a small amount of carbs to pad it out, but enough to give you some energy for your workout. Also, by serving in the peppers you get a smaller portion than your average bolognese and an extra portion of veg!

1 x pepper per person
50g Quorn mince per person (I reckon it would be nice with the chicken too)
2 cloves garlic
1 tbsp oregano
1 tin of tomatoes
50g mini pasta shells per person
grated cheese

• Preheat your oven at 190°
• Firstly, fry off the Quorn until soft, then add the garlic, oregano and tinned tomatoes, bring to the boil and then simmer until thickened a little
• At the same time, cook off your pasta shells and when they are cooked add them to the Quorn mix
• Half, core and deseed each pepper and fill with the Quorn mix
• Sprinkle with a little grated cheese according to each persons taste and bake in oven for 20 minutes
