Carrot and Orange Soup (v)

Serves 2 – Ingredients
• 1oz butter
• 1 clove of garlic, crushed
• 1 med onion, peeled and chopped
• 500g carrots, peeled and coarsely grated
• 1 litre water
• zest of 1 orange
• 1 teaspoon tomato puree
• Salt & pepper

Method
1. Melt the butter, add garlic, onion and carrot. Stir and cook covered for 5 minutes on low heat
2. Add water, orange juice zest, tomato puree and seasoning. Simmer covered for 30 minutes.
3. Liquidise and enjoy.
